Chicken breasts were on sale this week for $1.79/lb so I did this recipe which my kids love. Cut up 3 breasts into strips. Combine 1 c. Italian dressing, 2 tsp lime juice, 3tsp honey (sometimes I add a little extra) and the chicken strips in a ziplock bag and marinate for 1 hr. (minimum). Pour the whole bag of goodness into a skillet and the sauce will thicken and carmelize the chicken as it cooks. We serve with rice and a salad.
Corndog Casserole:
1 box of Jiffy cornbread mix (77 cents)
1/3 cup milk (idk how many cents that is LOL)
1 egg (9 cents)
6 hot dogs, cut into rounds (a pack of generic beef dogs is 88 cents)
1 can of cream corn (54 cents)
1/2 cup of shredded cheese (1/4 of a bag, so about 50 cents worth)
Mix together cornbread mix, egg, and milk. Stir in hot dogs and cream corn. Spread into 8x8 glass pan that has been sprayed w/ nonstick spray. Bake at 400 degrees for about 25 minutes (sometimes it takes longer). Sprinkle cheese on top.
I eat mine w/ mustard, and the kids squirt ketchup all over theirs. I usually serve it with coleslaw and fruit, but since it has the corn in it--you could do w/o an additional veggie and just serve it with fruit. The kids LOVE this, and the recipe is easily doubled to a 9x13 pan by using another box of mix and the whole pack of hotdogs.
Pull Apart Pizza
1 can biscuits
1 cup spaghetti sauce
Mozzarella cheese
Any pizza toppings you like.
Spray a casserole dish with PAM. Rip biscuits into bite sized pieces and dip into sauce. Throw into pan. Top with pizza toppings. Top with Cheese.
Bake at 350 degrees for about 30 minutes.
Devour.
