Preheat oven to 325

Shrivel some bacon slices in a pan, remove and sautee mushrooms, garlic and onion. Line a muffin tin with oil or bacon grease to keep from sticking. Place a couple spinach leaves on bottom, add bacon around the sides, break open an egg in each muffin tin and top w/ the sauteed mixture. I also added cayenne pepper to mine.

Bake for 25 min.

sounds yummy, i might try it in the AM. got everythign but the bacon - but will go get it today

still have no bacon - but i never thought to ask - do you use pork bacon or turkey bacon?

either is ok to get, dh prefers pork but the boys and i eat turkey more.
