Does anyone have any good Salad recipes? they can be green, fruit pasta, anything.

Salade Nicoise (main course salad from the Nice region of France)

1 lb potatoes
1 can green beans
1 can black olives
1 can chunk light tuna
2 tomates, cut in wedges
2 hard boiled eggs, halved

vinaigrette:
3/4 c. olive oil
3/4 c. red wine vinegar
1 tsp salt
1/2 tsp tarragon
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp pepper

Blend vinaigrette ingredients, set aside. Peel slice and boil potatoes until soft. Drain and place into large bowl. Add green beans and olives. Pour vinaigrette over potato mixture. Cover and refrigerate and marinate for at least 4 hours, stirring occasionally. Place potato mixture (reserving vinaigrette) onto a platter. Garnish with tuna, tomatoes and eggs, pour reserved vinaigrette over garnishing.

Broccoli Salad

1 cup mayonnaise
1/4 cup sugar
2 tbsp. apple cider vinegar
2-3 heads broccoli - bite size
1 sm. red onion - diced
1 cup green grapes
2-3 pieces bacon - crumbled
1/4 cup sunflower seeds
1 pkg. craisins

Mix mayo, sugar, and vinegar. In a separate bowl combine remaining ingredients. Mix dressing into salad. Chill 2 hours.

Pasta Salad


1 can garbanzo beans (rinsed)

1 can kidney beans (rinsed)

Cauliflower, broccoli, olives, carrots and red onion chopped or sliced in the amounts you want

1 pkg noodles (spirals or whatever you want to use)

1 bottle Italian Dressing

Shredded parmesan cheese


Cook noodles, rinse and cool. Add chopped veggies and beans. Stir in part of dressing, you may not need it all. Stir in cheese.


It’s best if it chills for a couple of hours or overnight before eating.













I guess you could call this a dessert but it's in my salad section in my recipes and I bring this sometimes when asked for a salad.



Raspberry Fluff

2 lb vanilla yogurt

1 8 oz cool whip, thawed

1 small box cheesecake instant pudding

1 small box vanilla instant pudding


Mix together and chill at least 2 hours. Can be done the night before.

One hour before eating mix in 1 pkg frozen raspberries. Break them up some before adding.
Don’t stir before serving or the whole thing will turn pink.

Here's a recipe for regular Potato Salad:

Potato Salad

Ingredients:
8 medium potatoes, cooked and diced
1 1/2 cups mayonnaise
2 Tablespoons cider vinegar
2 Tablespoons sugar
1 Tablespoon yellow mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
2 celery ribs, sliced
1/2 cup finely chopped onion
5 hard-boiled eggs, chopped
paprika


Directions:

1. Place diced cooked potatoes in a large bowl.
2. Mix mayonnaise, vinegar, sugar, mustard, salt, garlic and pepper in another bowl.
3. Add this mixture to the potatoes.
4. Add celery and onions, mix well.
5. Stir in chopped eggs.
6. Sprinkle paprika on top before serving.
