It's apple season ya'll!
For those of you who haven't blocked my feed on Facebook during election season (haha!) you've probably seen a post or 2 about apple recipes.
I have been looking and looking for a recipe that was like a cross between pie and cake. Im not really a crust person but I LOVE apple pie.
Well my SIL called me last night and gave me a family recipe.
Because I've become such a baking queen I took that recipe, changed about half of it, and ended up with the BEST freaking apple cake I have EVER had.
The pan is over half gone and I just made it this morning.........
I thought I'd share.
3/4 cup sugar
1 1/2 cups flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 cup vanilla Greek yogurt
3 teaspoons cinnamon divided
1 teaspoon nutmeg divided
1/4 cup melted butter
1/4 cup unsweetened applesauce
5 chopped apples (about 5 cups)
Preheat oven 350 degrees
Toss 1/2 t nutmeg and 1 t cinnamon over the chopped apples and set aside.
Mix all dry ingredients in a bowl.
In a seprate bowl thoroughly whisk wet ingredients.
Mix wet into dry until smooth.
Fold in chopped apples.
Grease and flour an 8x8 pan, pour batter into pan, bake for about 45 minutes or until toothpick comes out clean.
