I LOVE quinoa we eat it a lot. Regular quinoa (the whitish tan stuff) is fluffy and delicious, the red is a little earthy and chewy, the black I think is a little bitter.
I like to use it in place of rice.
One hint is NOT to use a 2-1 ratio. It makes for soggy quinoa. Use 1 1/2 cups of liquid for each cup of quinoa. I also prefer it made with water not broth as some people recommend.
Let me know if you find any good recipes!! The few I've tried have been disappointing.

Also, it tastes different if you brown the grains in the pan first vs if you don't.
Make sure you rinse/soak the grains first before cooking, the outer seed is very bitter and yucky.
Now I think I'm going to have to have quinoa for lunch
I love quinoa!! I make a cold bean quinoa salad usually. Sometimes I make like an all in one dish.
2 cups quinoa / 4 cups cooked - cool before mixing in
1 can each of kidney beans, black beans and mixed bean salad beans
Corn kernels frozen or canned
2 large tomatoes chopped
1 red onion chopped
Cilantro fresh chopped
3 limes squeezed
Cumin, salt, pepper
Optional yellow pepper, cucumber
This one I serve warm
Sauté veggies of choice
I use zucchini tomato onion garlic and mushrooms
Add cooked quinoa,
Just before serving I add fresh basil leaves.
Quinoa is really versatile. You can add any flavours you like.
