I use to plan ahead. It seems that since I've been a SAHM I am so very unorganized. I hate it. most nights are pizza nights. The kids love and appreciate that. Lol. I also do a ton of sewing during the week so that puts a big damper on attempting any sort of schedule or routine nowadays. Lol. I hate going to the grocery store as well.
We try to make a monthly menu that is easily adjustable if I don't feel like cooking something (or anything), but we frequently divert from it and we're stuck trying to figure something out at the last minute.
I usually plan the next week's meals on the weekend. Sometimes I have a long day at work and decide to order pizza or grab something fast. Sometimes (like tonight) I plan ahead that I'm just going to pick up a rotisserie chicken from the market. We are having mixed vegs (zucchini, squash, broccoli, peppers) and a pasta side.
I plan my meals on Thursday nights and shop on Friday mornings. I base my meals on what is on sale. I also have a freezer full of meals put together that just need to be cooked. I love having easy options ready to go at any time.
I'm a planner, our meals are planned a week in advance. I usually sit down on Thursdays and come up with a week's worth of dinners and make my grocery list then shop Friday mornings. I have this picture frame on my counter that I use as a menu for the week, and I use a dry erase markers to write down everything that we're going to have for the week and then usually I let the kids decide when we eat what. Works well!
