I really really want to attempt some fleece soakers - I have minimal sewing experience, but have found what I think looks like a pretty simple pattern.. do you think this would be a good beginners project???

hmm, is no one coming in here anymore. Fleece soakers are a good beginner project I think. I used this pattern (made mine out of wool, but same thing)

Katrina's Sew Quick Soaker Pattern: Free soaker pattern

definitely read the rest of her blog, she has lots of directions and tips, and some other patterns, like longies, and she is very beginner friendly.

It depends on what you mean by beginner. You do need SOME sewing skill to make the soakers. I just remember thinking when I was making them that a beginner might have trouble getting the leg binding on. I did however make mine double layered so it may have contributed to it.

I'm by no means a beginner, and I had some trouble with Katrina's soaker. The leg holes were fiddly with my machine. Katrina did make a snapping version of her trainer though, so I may try that one.
