3 cups cooked chicken (I usually have some shredded chicken that I cooked myself in the freezer but cooked chicken breasts work fine too.)
2 cans of beans ( I use one pinto and one red kidney but use your favorite)
1 can of corn
1 can of rotel
6-8 cups of chicken stock (I am not sure if this is right or not I just put it in until it is soup)
1 packet of taco seasoning
1/2 packet of ranch seasoning
1 1/2 cup of white minute rice
Put all ingredients (drain the beans corn and rotel) except rice in a pot (or a crock pot works well too) If cooking on the stove simmer for anywhere for 30 mins - a couple of hours just don't let it boil dry. About 10 mins before serving put in the rice. If doing it in the crockpot just place all except rice and cook on low for 4-6 hours add rice 30 mins before serving. The longer you let this simmer (or cook in the crockpot) the better it tastes. Serve with shredded cheese and avocado if you like. Sour cream is good with it too.
