Margarine (or butter) softened 1/2 cup (I use the lowest fat margarine I can find)
White Sugar 1 1/4 cups
Large Eggs 2
Vanilla 1 tsp
All-purpose flour 2 cups
Baking powder 2 1/2 tsp
Baking soda 1/2 tsp
Salt 1/4 tsp
Mashed Banana 1 1/2 cups (about 3 medium)
Cream margarine, sugar, eggs and vanilla together in large bowl until light and fluffy.
Combine flour, baking powder, baking soda and salt in medium bowl.
Add flour mixture to margarine mixture in 3 additions, alternating with banana in 2 additions, beginning and ending with flour mixture. Beat on low until batter is smooth. Add one half package of milk chocolate chips (I use Hershey's Chipits - Pure Milk Chocolate and I get the 270g packages), beat until well incorporated.
Fill muffin cups 3/4 full. Bake at 350 F for 15 - 17 minutes. Makes 2 dozen muffins.
*When I make this recipe I double it, and I almost fill the cups complete, I bake them for 22 minutes and they are fairly large (I usually get about 28 - 30 muffins), and they come out so nice and fluffy and moist, my girls just LOVE them (so does DH
If you make them the way that I do and yield 30 muffins, 1 muffin is worth 225 Calories and 7.5 grams of Fat.
