I'm making an... experiment. Kinda like a Mexican shepherds pie? I made some mashed potatoes of course, and I cooked up some ground beef and black beans with a few spices. I dunno, it doesn't smell that good TBH. Normally I mix in some frozen veggies (peas, carrots, and corn) but I don't have any of those and I don't think frozen broccoli will taste quite right. I'm going to see if P can pick up some frozen corn on the way home.

I make something called tamale pie that has ground beef (with taco seasoning) and black beans on the bottom with cornbread on the top instead of mashed potatoes. It's kind of like Mexican shepards pie.

Tonight we had pork chops with chipotle BBQ rub, pinto beans, and rice with poblano peppers and cilantro.

We had turkey sausage, which the kids call "the big hot dog", corn, mac n cheese, and fruit.

I made Spanish Rice at the request of my pickiest eater. It's a box of Spanish Rice, but I cook up 1 lb of ground beef first, then follow the directions on the box, except I also add one can drained corn (or the frozen equivalent-whichever I have) and top with cheese. I serve with tortilla chips instead of forks. The kids love it, which is a nice break from the normal dinner time drama. DH uses the leftovers in breakfast burritos.

We had Thai green curry chicken, the kids had basically chicken Parmesan with ricotta added in, and not fried. I generally DON'T make two meals, but the curry is spicy so I won't force them to eat it.
