My family LOVES this stuff! It would be great for a holiday meal too, it's not quick, but is easy and smells amazing!
3-4lb boneless pork loin roast (or 2 2lb boneless tenderloins)
2 c apple juice
1 c apple butter
1/2 c brown sugar
1/2 tsp ground cinnamon
1/2 tsp ground cloves
Preheat oven to 350.
I usually cut the roast in half, it fits well in a 13x9 casserole dish.
Pour apple juice over roast, cover with aluminum foil and bake 1 hour.
Mix other ingredients in a small bowl.
After cooking for 1 hour, spread apple butter mixture over roast, recover (i usually tent the aluminum foil so it doesn't stick) and bake another 2 hours until fork tender.
If you'd like, drain some of the cooking liquid into a saucepan and add a tablespoon or two of cornstarch, and cook until thickened to make a delicious gravy.
I like to serve this with Cinnamon Apple Rice:
3/4 cup uncooked white rice
1 1/2 cups apple juice
1 apple, cored and chopped
1/3 cup raisins
1/2 teaspoon ground cinnamon
1/4 teaspoon salt, or to taste
In a saucepan, combine rice, apple juice, chopped apple, and raisins. Season with cinnamon and salt. Bring to a boil, reduce heat to low, and cover for about 17 minutes. Lift lid, and see if rice is moist enough for your taste; if not, cook another couple minutes.
