My husband is a very health conscious eater so i have a hard time coming up with meal ideas. On my days off i try to have a nice dinner cooked when he gets home since he cooks when i work.

What are you having? I was thinking mashed potatoes for karmen but i dont know what else

We are grilling some salmon on cedar planks. So yummy. We will probably have some vegetables and rice with it. And girl scot cookies for dessert!!!

Tonight we're having homemade 4 way chili. Allison loves it and we'll eat it for a few days since DH is out of town.

DH went to Costco yesterday and got lots of meat and veggies, so we'll have pork or beef stirfry with some of the veggies he bought (some combo of tomatoes, mushrooms, asparagus, and/or broccoli).

I hate all of you. I've had mac and cheese the last couple of nights. Occasionally a grilled cheese sandwich for variety.

Taco/burrito bar tonight. I'll make some ground turkey, beans, cheese, tomatoes, cucumbers, avocados, sour cream, salsa, etc and then everyone can make their own taco/burrito with what they like.

That actually sounds really good to me! The rest of the family doesn't eat that stuff, though.

not sure yet....better get thinking to catch up with you ladies....if I had garlic I would make garlic butter pasta with shrimp.....but of course I don't have garlic.

Sounds good ladies! I'm baking salmon cajun style, homemade garlic cheddar biscuits and baked potatoes! I know I should have a green vegi, but I still crave potatoes like crazy, lol..maybe a salad so I won't feel too guilty!!

Not sure yet. I have been thinking about homemade garlic mashed potatoes lately. Maybe I will start with that and figure out from there.

Haha, well I'm picking up sandwiches from the deli. I pinched a nerve in my back/pelvis area, so I'm not getting around too hot. And it sounds good. Haha

We are having whole grain pasta with sugar free sauce and a veggie tonight. What I want to have? Pizza and Cadbury Eggs. Not exactly a diabetic meal.
