Pumpkin Apple Streusel Muffins (my favorite...yummmm)

2 1/2 cups all-purpose flour
1 1/2 cups white sugar
1/2 cup brown sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup canned pumpkin (I like to add a little more )
1/2 cup vegetable oil
2 cups finely chopped peeled apples

TOPPING:
1/4 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter or margarine

In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt.*

Combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples.*

Fill greased or paper-lined muffin cups three-fourths full.*

For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle 1 teaspoon over each muffin.*

Bake at 350 degrees F for 30-35 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

Cream Cheese Frosting

11 oz softened cream cheese
⅓ c softened butter
3˝ c sifted powdered sugar
1 tsp vanilla extract
2 tsp orange juice
1 tsp grated orange peel

Mix cream cheese, butter and sifted powdered sugar in a large mixer bowl until fluffy. *Add vanilla extract, orange juice, and orange peel; beat until combined.

This cream cheese frosting does have a little orange taste but I love it with a carrot cake or on a bran muffin. It's so good!

Pumpkin Fluff Dip

1 (16 ounce) container frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (15 ounce) can solid pack pumpkin
1 teaspoon pumpkin pie spice

In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until serving.

Eat with graham crackers or vanilla waffers. *Also try freezing the dip...dip graham crackers in the dip, wrap in wax paper, freeze, and eat.
