Hey Ladies,
I am way overdue for adding recipes here, but this one is easy since I literally made it up about a half hour ago. Wanted to get it down before I forget all what I did!
I eat far too much tuna fish for lunches - it's cheap, easy, and since I eat lunch at home most days, works for me. I usually just make a very boring tuna salad, and eat it on potato chips (no bread, just tuna on chips). Deelish, but it gets old. Today I tried something new...
Ingredients
1 can tuna, drained - I prefer tonno in oil, but Bumblebee in the gold can is awesome too.
mayo - not miracle whip
green onions
cherry tomato (any tomato would work)
bacon - 2 slices
celery salt - to taste
salt & pepper - to taste
bread
lettuce (prefer butter, but any works)
Directions
Drain the tuna, place in bowl.
Add mayo to desired consistency (I usually use about 2 tablespoons-ish)
Toss in a few (2-3 tbsp) chopped green onions
Chop 1 or 2 cherry tomatoes, add to mix
Sprinkle with celery salt, salt, and pepper
Mix all together
Toast the bread. Place lettuce on toast, add tuna salad, top with 2 slices cooked bacon.
For some reason it was just the right combo and tasted so, well, tasty!
