Hi Ladies,
I talked about this for the better part of this week, and after making it last night, I just had to share. These were so easy and SO deeeelish!
2 pounds boneless skinless chicken thighs or breasts
1 cup of your favorite Caesar dressing (I like Newmans creamy caesar)
1/2 cup shredded Parmesan or Romano cheese (not the canned grated stuff)
1/4 cup fresh chopped parsley (if you don't have fresh use around 2 teaspoons of dried parsley)
1/2 teaspoon ground pepper
lettuce (romaine or bibb/butter)
slider buns or regular sized hamburger buns
1. Place chicken in a 3-4 quart slow cooker with 1-2 cups of chicken broth, cover and cook on low heat for 4-6 hours. Note: you could also use water mixed with chicken bouillon granules.
2. Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat.
3. Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.
4. Spoon mixture onto each bun. Top with extra shredded Parmesan cheese and lettuce to serve.
We had these hot, and ate every last bit of them. Next time, I will make the full recipe (I halved the recipe above for 2 of us) and save it for leftovers to serve cold.
These were super easy, and super yummy!
