May I request a recipe?

I'd love a good recipe for chicken salad. I love chicken salad sandwiches, and I find that it's pretty expensive to buy pre-made chicken salad at the deli. I don't mind buying it sometimes, but I'd really love to be able to make it myself.

So...can any of you lovely ladies help me out??

I have an idea for you... as opposed to a straight up "recipe"...

I don't like chicken salad because I HATE mayo... I've seen a ton of recipes on pinterest (of course, right?) that are substituting avocado for mayo.

SO... could you try using cubed/sliced chicken mixed with some avocado, a little low-fat mayo, lime juice, cilantro, and maybe red onion? A little tex-mex chicken salad? And put it in pita instead of on bread? Or use a tortilla?

I don't know, I'm just spouting ideas. Of course, I think it sounds delish and I might even make up a batch this weekend!

Let me know if you want something more traditional, and I'll find you something!

Thanks, Jeralynn! That does sound really good! What is cilantro? (I'm sorry for my ignorance - I have pretty much zero experience cooking.)

I'd love to try the recipe you mentioned. Let me know if you find any other ones, too. I love chicken salad, and I'm always up to try new kinds.

I sometimes buy one of those whole rotisserie chickens from the grocery store and shred off some of the cooked chicken into a bowl and add mayo and macadamia nuts but you can add whatever you like. It is a way to make super easy chicken salad.

I know my mom has made this one before as well but it takes more time than I typically like to spend on lunch:

Thanks, Elle! I think I will give that a try. I think I want to add celery to mine and maybe some dried cranberries. I used to order chicken salad from a restaurant across from the courthouse where I used to work and they added dried cranberries. It was unexpected, but very good!

I like to use chopped chicken, a little bit of chopped onion, some chopped apple, craisins, salt & pepper, and plain yogurt (instead of mayo).
