I really fancied some white choc chip cookies last week and couldnt find any in the supermarket so I decide to bake some. They turned out pretty well so I thought i'd share the receipe - I read through a few on the net and picked the one that sounded yummiest!
75g softened margarine or butter
75g soft light brown sugar
100g self raising flour
1 or 2 drops of vanilla essence
100g of white chocolate (chopped into chunk sized pieces)
1. Cream the margarine & sugar
2. beat in the egg
3. stir in the flour
4. add the drop of vanilla essence
5. if too dry and a couple drops of water (will depend on size of your egg, I used 1 medium)
6. stir in chocolate
Cover a baking tray with baking paper and then divide the mixture into splodges - I got 16 out of the mixture and theyre a good size.
Bake in the oven at 180degrees c for 15-20 mins till brown, yummy to eat warm!
