I have a super simple, super delicious chocolate cake recipe that is low in carbs and high in protein and good stuff for baby - including folate :O.
A little back story: So I have this recipe for a gluten free chocolate cake. I used it once for a friend's birthday, he has celiac disease. Anyways the cake went over very well and I filed it away for future reference but haven't made it again since, despite the fact that it was both the simplest cake recipe I've ever had the pleasure of making and the fact that it was PURE deliciousness.
Anywhooo... my SO's cousin is due 2 months after me and my MIL is throwing her a baby shower at the end of August. She also has celiacs and my MIL is already fretting about getting a cake for the shower. If you don't know gluten free cakes are typically fairly dry, and she was looking for a bakery that could make a good one. Low and behold I remember my recipe! So I made it last night for her to try and to test if it would stand up to freezing because she likes to make things in advance.
Then I was reading a pregnancy book over breakfast this morning that chick peas have folic acid in them.
Sorry this post was so long lol.
Guess what the secret ingredient in my gluten free cake is? Chick peas!!!!!!!!! That's why its high in protein. There's no flours of any type and it is a very moist rich and dense chocolate cake. You need a food processor to make it.
