What did you have or are you having for dinner tonight?

I made a super easy crock pot dish --

frozen chicken breast, a block of cream cheese, a can of corn, a can of rotel and a can of black beans. Seriously... how EASY is that?

and then you serve it over rice... and leftovers the next night can be in wraps burrito-style.

Burritos. Theo was very alert today so it was a duo effort between Rich and I since it was only half-prepped when Rich got home.

I had planned on a crockin' girls recipe - angel chicken, but I was up literally all night, so DH took Ava this morning and I slept until noon so it was too late for the crock pot. We had biscuits and gravy for dinner instead. Guess today is a cheat day already!

Shannon, what is 'a can of rotel'?

I have 35 frozen meals in the deep freeze... broke out our first one tonight, chicken enchiladas! Yum!

No idea. DP is sleeping , Mum cooked yesterday and I cooked the day before and don't intend to cook again as it completely wiped me out. Maybe a takeaway if DP doesn't offer.
