Enter a fall cookery creation here! Perhaps you're doing some baking for Hallowe'en or Thanksgiving, or making a traditional fall dish for a family dinner? Rustling something up with a windfall of fruit or making some comfort food as the days darken? Doing a big family dinner for Thanksgiving? Having a party with interesting finger foods for Hallowe'en? Making a pumpkin pie?

Please enter a picture of your finished creation and it would be nice to see an accompanying recipe in case we want to pinch ideas.

I give you.... Bloody Cupcakes

I prepared some lovely Pillsbury cupcake mix (I used chocolate) and took strawberry jam (the smooth kind, no chunks) and used one of my MIL's contraptions to pump it inside of the cupcakes.
Topped it them with cream cheese icing & drizzled Strawberry syrup on the tops.

(Warning: slightly messy, but scrumptious nonetheless)

Cranberry Pecan Maple Bars (Gluten-Free)
The recipe is realllly long...not sure if anyone wants it, but here goes...


Topping:
1 cup pecans
1 1/2 tablespoon butter
1 tablespoon maple syrup
1/4 tsp cinnamon
pinch of salt

"sauce"
1 tablespoon milk
2 tablespoons maple syrup
1/2 cup white chocolate chips
1 1/2 tablespoons butter
pinch of salt

Base
1 cup white rice flour
1/2 cup tapioca starch
1/4 cup almond meal
1/4 cup potato starch
1/2 tsp guar gum
1 1/2 tsp baking powder
1/2 tsp sea salt
3/4 cup dark brown sugar, packed
1/4 cup maple syrup
1/2 cup milk
2 large eggs
3 1/2 tablespoons butter
1 tablespoon coconut oil
3/4 cup dried, sweetened cranberries

frosting:
powdered sugar
tablespoon of maple syrup
1 tablespoon water
2 1/2 tablespoons cream cheese
Basically, mix all "base" ingredients together. Next, prepare the topping by first melting the butter and adding the pecans, then add the rest of the ingredients and cook on low until it thickens. Grease a 8 by 11 inch pan, pour the "base" in then add the topping. Next, cook the "sauce" by combining all ingredients together in a microwave safe bowl and melting them together, mix well. Pour that over the topping. Bake in a preheated 350 degree oven for about 25 minutes. When cooled, prepare the frosting (which is really more of a glaze that you drizzle over the whole thing).
I've got more gluten free recipes if anyone wants any . Love to bake on my "free" time.

George will be making bread tonight in our new Breville bread maker!
We also bought some pumpkin cake mix from Williams Sonoma with pumpkin pecan butter spread.

Roasted Pumpkin Seeds from 2 pumpkins



- Scoop out of pumpkin and separate all pumpkin slime
- Wash all slime off
- Let dry overnight (if desired, or can dry by hand)
- Put everything into a bowl and put 2 tablespoons of virgin olive oil and mix until all are coated (I put 3 for the amount in the picture and it was way too much!)
- Spread on cookie sheet, try to have minimal overlap
- I use fresh ground Epicure sea salt to lightly salt
- 10 minutes on 325 degrees, stir, and cook for an additional 12-15 minutes

I never got a finished product picture...I started eating and forgot! But here is Cameron watching me clean out the pumpkins.

I intended to toast the pumpkin seeds and make something with the flesh of the pumpkins we carved but it didn't happen.

I doubt I will get to do something now, will have to see if we can squeeze in any baking before the end of Nov but I doubt it. I'm enjoying looking at all your entries though!

Don't forget to add your Thanksgiving delicacies!!
