Come fall, salad just doesn't cut it for me anymore and I go for more hearty stuff


Orange Curry Soup

1 squash (butternut)
1 large sweet potato
6 ish carrots
1 onion
2 c chicken stock
2 cloves garlic
2 tbsp curry (madras)
1/8 tsp nutmeg
salt and pepper to taste
olive oil
water

In a large pot, saute curry and coarsly chopped onion until onions are translucent, then give minced garlic a quick turn. Cut vegetables into large chunks, add to pot with stock, nutmeg and enough water to cover. Simmer until very soft. Puree


Vegetarian Goulash out of a can
( quick and easy for when you`re having one of those days)

1 19oz can seasoned crushed tomatoes
1 19oz can mixed beans, rinsed

I usually throw in a bit of hot paprika and white sugar too.
Dump in a pot, heat, enjoy.


Cream of Mushroom

1/2 pound mushrooms of your choice, sliced
1 small onion, finely chopped
1 C chicken stock
1 C half and half (skim milk or almond milk)
1/2 C cold water
1/4 C butter (olive oil)
3 tbsp flour
1 clove garlic, minced
1/2 tsp (scant) dried Thyme
salt and pepper to taste

In a large pot, melt butter over medium heat. Add onion, mushrooms and garlic. Cook until onions are soft and and everything has had a chance to commingle.
Add stock and half and half. Mix flour and cold water and dump in pot along with thyme and parsley.
Cook (without boiling) 10 minutes or so, stirring often. Once it's thickened and the baby has lost all patience, blend with an immersion blender, slop some in a bowl and attempt to enjoy before it gets cold

Chicken Paprikash

2 lbs chicken legs/thighs
2-3 tbsp olive oil
1 onion
3 tbsp paprika (I like a mix of hot and smoked)
1 C chicken stock
1/2 C sour cream (yogurt)
salt and pepper to taste

Heat oil and add chicken and onions. Once skin is browned, add stock and paprika. Simmer for 30 minutes, until chicken is cooked through. Remove from heat and stir in sour cream. Serve over spaetzle, rice or potatoes.

If you are into taking the time, I have a Roated Butternut Squash recipe that is quite healthy.

I use the President's Choice Blue Menu No Sodium Added chicken stock with this recipe to severely reduce the amount of sodium. The only other ingredients are veggies and obviously I would recommend cutting the sour cream topping if you are trying to lose weight.
