thanks! I am sorry I jumped the gun and posted so early but I worried about getting to post it once the week gets going for me (love having a 3 day weekend!) =)

Creamy Poached eggs.




This is from better homes and gardens new cook book. Can you believe I never poached an egg and it was incredibly easy! This recipe was yummy and we are definately going to try it again.

2 english muffins or bagel
3/4 cup shredded american cheese
3 oz cream cheese with chives
1/2 c milk
4 eggs
Toast muffins or bagels. In a medium skillet combine cheeses and milk. Cook and stir over medium heat until cheeses melt. Break an egg into a cup, slide egg into mixture. repeat with remaining eggs. Cover cook over medium low for 3 to 5 min. Top muffin or bagel with egg. Stir cheese mix with wisk and spoon over eggs.

Eggs Pickled with Dill





PICKLED DILL EGGS

12 hard-cooked eggs, shelled
1 medium onion, sliced thin
3 /4 cup water
1 cup sugar
1 1/ 4 cup vinegar
2 teaspoons salt
1 teaspoon dill weed
1 /4 teaspoon garlic powder or 1 clove garlic, halved
1 /2 teaspoon mustard seed

Pack eggs and onion in 1-quart or larger jar. Bring other ingredients
to a boil. Then simmer 5-7 minutes. Pour over eggs. Chill 3 days before
serving. Eggs will be yellow.

Egg Nog the recipe on my ideas is a raw recipe and I went with a cook egg nog from my Better Homes and gardens cook Book.

Over cooked Egg Nog.



Second try



Egg Nog

6 beaten eggs
2 cups milk
1/3 cup sugar
2 to 4 tbs rum
2 to 4 tbs bourbon
1 tsp vanilla
1 cup whipping cream
2 tbs nutmeg

In a large heavy saucepan mix eggs milk and sugar. Cook and stir (watch carefully) over medium heat til mixture coats a metal spoon. Remove from heat. Cool quickly in a ice water bath. Stir while cooling. Stir in rum, bourbon, vanilla,
Chill 4 to 24 hours.
Before serviving whip cream and fold into egg nog. Sprinkle with nutmeg.

Cornedbeef and egg burgers



CORNED BEEF AND EGG BURGERS

1 large egg
1/4 can corned beef
3 or 4 Ritz crackers, crumbled very fine
pepper to taste
(do not use salt...the corned beef will make this salty enough)

In small bowl, beat egg, adding pepper, as in making scrambled egg. Do not add milk. Then using a fork, mash into the egg the 1/4 can of corned beef until the mixture is a smooth, even consistency through-out. Then add the Ritz cracker crumbs, and stir further until all ingredients are thoroughly mixed, and mixture will hold a peak when lifted.
This mixture will produce 2 patties, and the recipe can easily be doubled, tripled, or whatever.

Spoon equal amounts of mix into a skillet, and fry on medium heat until golden brown on each side. Dress the burgers with your favorite condiments.


I was not impressed with this recipe. The canned corned beef was $5 a can and we just didn't like it that much. DH though it was too eggs even though I cut back on the eggs. Tyler said it went down like a burger and oddly enough Scarlett ate and ate and ate the burger. Go figure. Any way it is simple enough that I can recreate it from my head if we ever need to eat a can of corned beef. The store had three brands and we used the most expensive in this recipe (Libby) The other cans I bought are a different brand, so that may make a difference. Since we didn't like this we probabkly won't try the loaf in my idea area. As far as food storage we would rather buy three cans of chicken or a can of beef in gravy for the same price or cheaper.

Egg Nog fench Toast



EGG NOG FRENCH TOAST

1/2 cup dairy eggnog
1 egg
4-5 thick slices bread
powdered sugar or cinnamon sugar for dusting

In small bowl, combine egg and egg nog stirring with fork just until egg breaks up.
Dip sliced bread into egg mixture (challah, french bread, or raisin bread all work just as well as plain white bread). Turn over and allow to sit in egg mixture 2-3 minutes per side.

In skillet, melt 2 T butter and saute each slice over medium heat 2 1/2 min or until golden brown.

Turn over and cook an additional 1 1/2 minutes. Serve, sprinkled with sugar and a pat of butter. Or pour over a little maple syrup, if desired.

Nicole, I can't get the picture of your corned beef and egg burgers to work.

Aside from that, WOW! I'm going to have to have help this week on mine. I'm not playing for points anyway, but there's no way I can make my dish on my own while recovering from this surgery.

Tiki, ideally the substitute would be a little closer to the ingredient but because I'm hurting too bad to look up suggestions, I will allow a tofu sub this week.

Lesha, ideally, egg should be the focus of the dish.

Guys I had stocked up on eggs for holiday baking and our hens are laying 3 to 4 eggs a day I was swamped with eggs no kidding I blew through 34 eggs yesterday and still have 1 dozen hard boiled and 26 uncooked eggs... so think "these results are not usual"

Broccoli Quiche
Makes 6 servings

-4 eggs
-1/2 cup milk
-frozen broccoli, thawed
-Weber Garlic & Herb seasoning
-shredded cheese

Preheat oven to 325 degrees. Spray a muffin tin with non stick cooking spray and place a few pieces of broccoli in each cup.

Stir together, the eggs, milk & seasoning. Pour mixture over broccoli and cook for 30-45 minutes. When nearly done, top with some cheese and let melt.

Marikas Fried Rice with “Eggs” (Tofu substitution)
Please bear in mind that I do not cook with measurements.
Jamine Rice
Homemade turkey broth (No salt)
Frozen Peas and Carrots
Fresh Ginger
Fresh Garlic
Fresh Green Onions
Fresh Mushrooms
Canned baby corn pieces
Dark Mushroom Soy sauce
Pepper
Oil
Firm Tofu (or eggs)

Rinse and Drain Rice, Bring rice and broth to boil, cook according to package directions. Spread Cooked rice on a cookie sheet and chill in fridge.
Heat a large pan to medium-high heat, In oil fry minced garlic and ginger, Mix in minced tofu, fry a little more, add a little soy sauce. Add mushrooms.
Place chilled rice in pan, break up into pieces add more soy sauce and some pepper, if you are using eggs add eggs now making sure to stir to distribute it evenly through the rice..
Cook Frozen veggies in microwave, when cooked add to pan with corn.
Add chopped green onions, spice more if needed and serve.If you aren't allergic you can drizzle some sesame oil over it for some more flavour

Also for those that didn't know Tofu is one of the closest things you can use to substitute eggs with. It's texture is a very close match and it's neutral taste makes it ideal to spice however you want. I have made scrambled "Eggs" before that my husband couldn't tell they weren't real eggs. Before Orions allergy we used to eat alot of eggs. Egg substitutes - Egg Replacer - Baking Substitute - Egg Allergies - Ener-G Egg Replacer

Captain Pieffle's Peanut Butter French Toast with Bananas

1/2 cup Milk
3 eggs
1/4 cup peanut butter
2 tbsp sugar
1/4 tsp cinnamon
4 pieces of bread
1 tbsp oil
2 bananas

Blend first 5 ingredients in blender until smooth. Pour into shallow dish
Dip bread in egg mixture, turning to coat both sides.
Heat oil in large non stick skillet. cook bread in batches 2 to 3 mins on each side or until golden brown on both sides. Serve topped with fruit.
