Whatever we pull out of the freezer! I still have freezer meals that I made while pregnant. Tonight was shepherd's pie.

Chicken Pockets

2c. cooked chopped chicken
1 3oz. pkg cream cheese
1T chopped chives or onion
2 T milk
salt to taste
1/2 c. crushed seasoned croutons
2 pkg refrigerator crescent rolls
1/4 c. melted butter

Mix chicken, cr. cheese, chives/onion, milk, and salt in a medium bowl. Unroll crescent rolls, parting along perforations to form rectangles. Place 1/4 c. chicken mix on each rectangle. Fold dough over filling and pinch along edges to seal. Dip each pocket in melted butter and then in crouton crumbs. Place on baking sheet and bake at 350 degrees for 20 minutes. Makes 8 pockets.

Just want to say the veggies with feta were delicious! Definitely will make again.
I think you can add whatever veggies you want really but I first cut up a large potato and sautéed it in EVOO for 10 mins or so. All the other veggies you can cut up straight into the casserole dish. We did 2 lg zucchini, 1 green bell pepper, and the sautéed potato. Oh and I added a garlic clove. I think onion would have been good in it too. Then you top it with crumbled feta (we used 6-8 oz) and bake it at 375 for about 20 mins. It was so easy and yummy. oh and I used a 9x13 baking dish.
Hope everyone enjoyed their yummy dinners!

Melissa, those sound great!! I may try those tomorrow; I bet I could make them vegetarian with our fake chicken stuff.

Just want to say I made kmh's chicken pockets (but with quorn brand fake chicken breasts ) and they were good! Very different and yummy! Bryan liked them too.
Kristen, I'll have to try the other recipe next!

I need to go through the freezer and plan for the rest of the week because I'm the only truly mobile person in the house right now (and I'm not all that mobile). I did fish last night with roasted squash and we had Wendy's tonight. I'm thinking shrimp and then pork chops for Thursday and Friday.

BTW stairs are stupid.

Could you share some info about your experience with your freezer meals? My mom has to have another surgery after this one and my husband will still be MIA so I'm wanting freezer meals for when the baby is here.

How on Earth do you ladies have time for this??? I was proud of myself for cooking rice yesterday to go with the gumbo my dad made. Kudos to you all!!!

That recipe looks good Kristen, might try that tonight. DH bought a Bon appetit recipe book on quick weeknight meals. His plan was that he would cook his way through it but he just got a new job so I think I might take over the project lol :-) The American Heart Association has a really good cookbook too with super healthy dishes- our favorites from that are chicken chilli, herbed pita chips with apricot cream cheese dip and baked jalapeño poppers..yum and all low cal! :-)
