I've just put a lentil and kale stew in the crock pot. Hopefully it'll be nice!

Chicken Pockets (chicken, cream cheese, onions, and spices in a pocket made of crescent rolls)
Pot Roast/Potatoes/Carrots and buttermilk biscuits
Turkey meatballs with mashed potatoes and gravy
Pork chops and sweet potatoes in the crock pot
Ham and Bean soup with Cornbread
Something with ground beef...not sure exactly what yet

We always have a salad and/or green veggie with every meal. I also plan to make another pumpkin pie this week...we have whipping cream left, so I need another pie just to make it even

Nothing fancy tonight ... DH is gone for bowling. At some point we will have a pork roast in the crock pot, probably tomorrow and then use for leftovers.

Tonight I'm making some strip steaks with mashed potatoes and spinach. Tomorrow I've got some pork chops with (no yolk) egg noodles and I'm going to roast some green and yellow squash to go along with that. Not sure beyond that! haha

Pulled Pork, Enchiladas, Hamburger Helper, Scalloped Potatoes & Ham, Meatloaf. We're still eating some meals that I froze a few months ago. Wednesday is my birthday so I will either have DH take us out, or bring something home.

Also...Stuffed Shells..MMMM!

I'm doing roast beef, gravy and a potato & carrot casserole tonight. Depending on leftovers I'll see what I will do later in the week.

Kristen, do you make your own Spanish Rice, or is it a mix? I have yet to find a recipe I like as much as the rice I used to get at a little family-owned place in Texas, but I'm always looking for a new recipe or mix to try and get something close.

i don't have enough time to prepare more than one homemade dish and steam a veggie. with rice i usually use a zatarain's or a near east box. i stick on an hour long movie for the kids and try and fly through dinner prep as ruby lets me. i don't know how you do it in your house!!!

I just go night by night usually.
Last night was quinoa, barley and kale soup. SO delicious!!
Tonight it's veggies (zucchini, potatoes, broccoli and green bell pepper) baked with feta. With that, garlic bread and tiramisu for desert.

Alex; I LOVE lentils and kale recently!!!!!! The quinoa soup was supposed to have lentils in it but I ran out of time ad forgot to soak them the night before. I decided to add barley instead. it was delicious still. Let me know how your stew is!!

Ugh I wish I knew. I usually try to plan my menu two weeks in advance but I feel like we have the same things over and over and over again! I am at a loss right now. I guess I need to do my menu when I am hungry! My fridge is soooo bare. I need to do some serious shopping. Nothing sounds good though. I also need quick prep stuff because I get off at 5:30 and home at 6:00...my kids are showered and in bed by 8:30 and I hate to send them to bed immediately after dinner We rarely use boxed dinners because of the sodium content and dh and me both have high blood pressure.

DH makes really good homemade Spanish rice..I think all he does is cut up a tomato or add canned tomato after the water boils with the rice m, and puts some chili powder and other herbs in there. SO good he came home after work with a bunch of stuff and made homemade veggie soup

Can you please tell me how you do the veggie bake with feta? Feta is my all time favorite crumbled cheese
