What's for dinner?

Left over night here! We have chili in the fridge from last night and also Chinese food from the night before that. Time to eat it up.

Gosh Ashley, I hope you are feeling better soon!

DH is working late, so Claire and I are having cheese tortellini with homemade sauce, broccoli, peaches, and a dill pickle (the peaches and pickle were Claire's requests ).

I finally feel like I'm gonna live again! Fever is coming down, so I'm praying I can go get Meghan tomorrow!

Wow Ashley, it must have hit you super hard. Did your husband have it that badly too? Hope you get to pick up your little peanut tomorrow. I'm sure she missed her mommy!

We had a Moroccan style vegetable crock pot stew with basmati rice.
It was really yummy, except when I made the rice this evening, it way over cooked somehow. even though I followed the directions on the package!

DH had it the worst. Went to ER with him Saturday afternoon. I can't remember being this sick in a long time!

Oooh I LOVE putting strawberries in my salad ^ A lot of times I actually substitute strawberries for tomatoes

Tonight I'm making vegan fried rice with lots of veggies.

We're doing pulled pork tonight! I'm actually excited for this I barely tried it like two weeks ago and I'm in love. I'm not a fan of white bread so I get to use my favorite flax seed/fiber bread (; and I think we'll be having mashed potatoes, or baked potatoes with a salad.

We had spagetti squash with a lettuce-garlic-pecan pesto sauce and diced chicken. I rarely make dinner, but this was my creation. It was yummy! DH said it was "decent". When I gave him crap for not appreciating my cooking, he said, "It was really good, I just don't like squash " And THAT is why he does the majority of the cooking in our house! Not because I don't know how, but because he is so dang picky!!!
