OT, but what are some of your favorite vegetarian/vegan recipes? I know we have a lot of vegetarian and vegan Mamas here and I bet you have some great ones

DH and I are Midwest farm-kids who prefer a steak every night (cooked rare ) but we have been talking about eating less meat or maybe going vegetarian once a week just for the health aspects. I'm all ears for ideas!

ETA: Oops, I guess I should have posted this in the Bistro!

Not a recipe, but I love to do a huge baking dish filled with different kinds of steamed veggies, and then put out several different kinds of dips. I have a recipe for a peanut sauce, a yogurt dip with cumin, and a soy based sauce. The one time I made it for a group of vegetarians, it was a hit

I love black bean burgers. You just mash them and mix with bread crumbs or oats, and whatever spices or other veggies you want...shape into patties and pan fry or grill :-)

When I was vegan I missed mac and cheese soooooo bad

I made this substitution once a week

1/2 cup flour
1/2 nutritional yeast flakes
1tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp paprika
2 cups almond milk (plain)
1/4 cup olive oil
1/2 teaspoon mustard

boil your choice of pasta set aside
mix yeast flakes flour salt and spices in a sauce pan Wisk on milk olive oil and mustard ciik on medium until bubbly thick and smooth pour over pasta and enjoy

I have lots of recipes if anyone doesn't think they could go veg let me know what you miss chances are I have a replacement!

That sounds pretty good...I might not even miss the meat!

What are "nutritional yeast flakes?" Where in the grocery store would I look for them?

I got mine at whole foods but health food stores have them in with the bulk items .

PASTA! So not vegan, but I love pasta!

Making whole wheat mac and cheese tonight. My kids love cheesy baked ziti too, vegetarian lasagna, etc. I could be a vegetarian because of all the pasta we love, but I could never cut out my cheese.

Quorn burgers are really, really yummy too. Doll them up with avocado, tomato, lettuce and red onion. Yum.

And how about taco salad without the ground beef with black beans and salsa.

thats where Daiya cheese comes in

how is pasta not vegan?? a ton of them have no eggs in them... I eat pasta all the time!

I'll admit I used to think that if I had to go vegan or vegetarian I would probably starve to death, but these recipes look delicious, and not nearly as complicated as I thought they might be. Can't wait to start cooking!

Trader Joes Orange "chicken" in the freezer section is amazing. I admit most meat substitutes there is a noticeable difference.. But with the orange chicken I even fooled a couple of meat eaters! That with vegan fried rice is a staple in my house.
