My Mom made this when we visited and it was delicious! We ate it on regular whole-wheat bread, but decided it would be even better in pita pockets, or for low-carbs you could eat it by itself. I am also going to find some healthier dressing for it...the one recommended has a ton of sugar in it.
Crunchy Poppyseed Chicken Salad
4c. broccoli slaw
2 lg. red bell peppers, thinly sliced
4 md. carrots, shredded
1 can (8oz) pineapple tidbits
3 chicken breasts, cooked and cubed
1/2 c. Kraft Special Collection Poppyseed dressing
1/4 c. cashews
Combine all in large bowl except dressing and cashews. Add dressing and toss to coat. Sprinkle with cashews.
