how would a single mom to be go about converting?[/b]
I don't think your marital status or the fact that you have a child makes conversion any different. Depending on the denomination, a rabbi may give you religion classes and demand some degree of observance or not. Orthodox conversions are more strict and demand you keep at least kosher, Shabbath and the laws of family purity, but Conservative and Reform conversions don't require this.
For all of them an immersion in the mikvah is required. A rabbi (sometimes 2 or even 3) are present but remain at the door with their backs to you (they obviously cannot see you naked). They give you a blessing and you immerse yourself. That's pretty much the actual conversion ceremony, but as I said some rabbis will ask you to learn Judaism before a conversion.
I hope I was able to give you some answers. A wonderful site for basic questions is www.askmoses.com. You can subscribe and everytime you have a question there's someone qualified to answer.
Good luck! We hope to welcome you into the sisterhood very soon
