This is NOT a lowfat dish! I will just start with that! But every time I make it it is a HIT! And the best part is it is incredibly simple!
Ingredients:
Chicken Breast (I usually filet them, but you don't have to)
Buttermilk Ranch dressing (must be buttermilk, not regular)
Bread Crumbs
Town House crackers **crushed**
Dash of salt
Dash of pepper
Melted Butter or Olive Oil
Marinate the chicken in the buttermilk ranch dressing all day or overnight. I like to put them in at night and marinate it while I am at work.
Prehead oven to about 425. Mix bread crumbs, crushed town house crackers (half to half ratio), and salt & pepper in a bowl. Pour onto a plate or shallow dish.
Dip each piece of chicken in the mixture and coat completely.
Place in a baking dish. Drizzle with melted butter or olive oil.
Bake until completely cooked (this will vary depending on how large your chicken is...)
Best served with Mashed or Baked potatoes and Green beans!
**This can also be modified to make chicken nuggets or chicken strips, just cut up the chicken to whatever size you would like and place them on a cookie sheet, making sure that you turn the chicken halfway through baking!**
