I have really limited time at lunch...about 40 minutes to get my lunch together and eat it. I am used to eating frozen dinners, ham sandwiches, PB&J...and generally things that just aren't great for me. I need some super easy healthy lunch ideas.
I usually bring a turkey sandwich on wheat and a yogurt or some fruit for lunch. Since finding out I was pg, I have brought two pieces of fruit, one for in between bfast and lunch and one for about 2 hours after lunch and now I only eat the sandwich for lunch. Basically, I am eating every 2.5 hours now and plan to keep that up as long as possible. I also sometimes grab some soup from the grocery store and those make some healthy and quick lunches!
I make my lunch the night before or in the morning since I only have 30 minutes for my lunch at the office. I will make a chicken salad or have leftover pasta, peanut butter sandwich with veggies & dip. Leftovers are definitely a life/time saver. I try to make extra to feed both me and BF for lunch the next day. You could make a big lasagna on the weekend and have that every day OR freeze half and alternate between that and something else then you have lasagna frozen for another day. This can work with casseroles and other dishes too. Sometimes I buy those store fresh rotisserie chickens and make chicken sandwiches for the week. You can always "spice" it up, chicken salad one day, chicken with hot sauce the next (if you like that and can handle it when prego), chicken wtih ranch, chicken wrap, etc. Lastly, soup and salad. I love food lol, this is sad how much I can talk about it.
HEHE- I am currently just eating everything in sight. I have tried to incorporate a snack before lunch, such as a granola bar, crackers, nuts. By lunch time recently I am STARVED so I don't limit myself. I have also reminded myself that in a few weeks I might not be able to keep anything down so hey.....bring it on.
