Is anyone else going to make ahead some meals and freeze for after baby is born?
I have winter break in a couple weeks and was planning on doing this. I have our moms and a couple friends who are great about helping out, but I'd love to be able to not think about/make dinner for awhile after baby comes...
Here is my list of ideas (please add your own!):

Oooooh! I'm loving making things that can be taken out and eaten in single servings! So I did meatloaf, but baked it in muffin tins and then took it out and froze it that way so DH can just heat up a plate super quick. Also make twice baked potatoes and froze them individually. If you've got the tupperware for it, deconstructed lasagna (noodles tossed in with ricotta and sauce and meat or veggies) is great for single serving things too.

Soup and chili are great to have in the freezer. Also, stroganoff sauce - just cook some pasta and maybe a frozen veggie. Oh and I've had good luck with fried rice before. Also, doing breakfast stuff has been a hit -- french toast particularly because it's easy to make in large batches, but I think that it's a pain to make on a regular basis. You can re-heat slices in the toaster.
