I took Mexican Dip to a family dinner today and made extra for home. It is super yummy and I can't stop eating it.
The stuff in it makes it sound a little gross, but trust me it is fabulous and super easy to make:
2 blocks of softened cream cheese.
2 cans of rotel- drained
1 can of whole kernel corn -drained
1 can of black beans -drained
I ranch salad dressing mix
Mix it all up, chill it overnight and serve with corn chips.
Delish, but a tad scared to step on the scales tomorrow.
