DH has been cooking things like tomato soup and grilled cheese. Quick and easy! My mom was here for two weeks and she cooked great meals every night Nd we had a lot of leftovers from those meals too. We had friends bring us our fav Thai takeout one night too. Now DHs parents are here for a week so I suspect more home cookin'!
We've been doing a mixture of things. For the first 3 weeks I was lucky to have my mom in town to plan meals along with DH. We've used some of the freezer stuff, but basically I make sure to plan meals a week in advance and make them SUPER simple. I am doing a lot of one pot/crock pot recipes. We also are just having simpler meals...breakfast for dinner, heating up a frozen pizza and having salad on the side, etc. I also make sure to have a few freezer meals handy like frozen lasagna, ravioli from Sam's Club etc in case we need it in a pinch. Also we do leftovers like once or twice a week since I make enough for 4 people so that we can do so. It helps us eat moderately healthy and not eat out, which saves us money.
Tonight is a super simple shepherd's pie. Brown the meat with some pre minced garlic, frozen veggies nuked and poured on top of the meat in a big Ramekin, some instant mashed potatoes on top, a little low fat cheddar cheese sprinkled on top, pop in the broiler for a few minutes until the cheese melts, and voila! dinner is served

I will check out that site. I just bought a crock pot a few weeks ago. I am slightly afraid to use it because I have had one blow up a few years ago, but it was a fluke thing.
We have done a combo of meals I prepared ahead of time, a few frozen things and grabbing food out. Tonight we got lucky because a friend is dropping off a meal. Which I am stoked about because I am so exhausted right now.
We're having beef fajitas tonight. I shop at this great grocery store, Fresh and Easy, and they sell premade dinners. Like this fajita meat was preseasoned and packaged with vegetables. Instead of saying how can I season this meat tonight... I buy their stuff which is done freshly. I could never come up with some of the meals I buy there! This is definitely gonna be handy when I really start playing mom once I go back to work.
I'm making more food now. We are trying to eat healthier and inexpensive, so I've been very pleased by making up batches of plain rice, beans, lentils or quinoa to have in the fridge and then using them for quick meals. Add lentils or quinoa to salad for protein. Wrap up some beans and rice in a tortilla. Throw some in with some broth and veggies for soup. Fried rice for dinner. Lentil stuffed bell peppers. Hot quinoa with coconut milk and almonds for breakfast. Put a little salsa on any of them for a great side dish. Mmmmm...
I cook every night but like everyone else I have started making more casseroles and soups I am trying to eat healthier and have started making recipes from this website: Skinnytaste it also helps me to keep up variety
Well when DH is away at work, I make only very easy 20 minute meals or microwave meals only. But when he is home to watch Josh while I cook , I try to make better dinners. No body ever gave me prepared meals Then again, my closest family member is 1500 miles away lol
