Ok for the first week, I am going to list 2 recipes, just in case you aren't liking something in one of them. You can choose to do one of them or both of them, just make sure to check back in on how it was, anything that you added to it and you can even post pics of the finished product if you would like.

Here are the first 2 recipes

SAMANTHA'S SWISS CHICKEN
4 chicken breasts
1 can cream of chicken w/ herb soup
4 slices Swiss cheese
Pepperidge Farm stuffing
Butter

Place breasts in baking dish. Top with cheese slices and pour chicken soup over them. Top with stuffing, and drizzle with melted butter. Bake at 325 for about an hour, or until chicken is cooked through and cheese is bubbly.

Brooke's Crockpot Taco Chili
2lbs. ground beef or ground turkey
4 10oz. cans Rotel tomatoes (*NOTE FROM BRANDY-I SUGGEST USING MILD ROTEL, I BOUGHT REGULAR AND MY FAMILY COULD NOT EAT IT IT WAS WAY TOO HOT*)
2 can kidney beans
2 pk. taco seasoning
1 can corn
Fritos
Shredded cheddar cheese

Brown meat in a skillet on the stove. Then put meat, tomatoes, kidney beans, corn, and taco seasoning in the crock pot, stir well. Cook on high for 2 hours or low for 4 hours, stirring occasionally. Add fritos and cheese to each bowl once finished, we usually layer, chili, cheese, fritos, then another layer of chili.

Here is how lame of a cook I am......On this swiss chicken recipe, do we cook the stuffing first or put it in the recipe uncooked?

This experiment has me remembering the 70's commercial and picturing myself becoming a (semi-good) cook. "It's Shake n Bake, and I helped"!!!!

I was unsure about how much stuffing to use and how much butter so I did some researching and found this-
Ingredients:


Swiss Chicken Casserole I (continued) 2 of 2
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of
chicken soup 1/4 cup milk
1 (8 ounce) package dry bread stuffing mix
1/2 cup melted butter

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
3. Bake 50 minutes, or until chicken is no longer pink and juices run clear.

I am making it tonight!

Your directions don't suck..it's just that crappy cooks like me need all the details they can get!!

I made it last night, I overcooked the chicken, I was so worried it wouldn't be done and then I overcooked it...it was really chewy but still good. The stuffing and soup and swiss cheese was so good, I thought about making it as a side dish!!

I'm making the taco chili tonight. More info to come!

Ok I'm excited I'm making swiss chicken tomorrow for dinner. Hope DH likes it he's a picky eater, but I think he likes everything in it.

I made samantha's swiss chicken and it was *soooooo* good!! I am adding it to my recipe book tomorow!
For the first time ever, my chicken came out really moist and tender. I usually turn my chicken into rubber.
I guess what made the difference was I used fresh chicken breasts. Usually I buy then freeze/thaw. Using fresh, not thawed really makes a big taste difference.
Anyway, I had small seconds and the rest is for me & dh's lunch tomorow.
I give it 5 stars. If I actually want to put it in my cook book, then it's good! I try so many recipes and they never make it lol.

I was gonna take pictures but my camera disappeared...

I made the taco chili and it was awesome.. we all ate it except my very very picky boy! I didn't get pics because Bob was in too much of a rush to eat and I wasn't fast enough!!!! LOL!

I am going to try the chicken.. but not sure of the swiss cheese.. do ya think provolone or cheddar would work?

Brook, made your taco chili tonight and it was a hit!! Dh and Braedyn aren't home yet, and Tannen is having a late nap so they haven't tried it but me and the middle 2 really enjoyed it...even my picky eater Teagan although I had to pick out the kidney beans and the tomatoes Thanks for the recipe!!

i totally forgot to get my ingrediants for the chili when i was at the grocery store so im going to get them this weekend probably make it on sunday since we have a birthday party on saturday.

ugh I'm a loser. i should have put 'lol' or something after my last comment so you knew i was kidding!!
i'm glad it was still good. yeah i was iffy about the chicken being done too so i pulled the middle piece out and cut it to check it the first time i made it.

I'm glad you liked it. yea i have found that fresh chicken is way better and making sure its 100% thaw helps too. I'm guessing because it sits in the juices there is no way for it to get dry.

OMG!!!! Samantha that chicken was awesome!!! I made Bob's with the swiss but noone else likes that so I made it with provolone and it was awesome!!! I didn't get a pic because of course I was a little slower than the really hungry kids and Bob!!! LOL!!!

I am so excited that everyone is trying these recipes!!!

Here are my thoughts on them!

Taco Chili- This was my favorite of the three recipes I tried! The kids didn't eat it but Logan and Dave did...it was so good and so easy, I swear I think I will make it for parties since it's so easy.

2lbs burger


4 cans Rotel tomatoes


1 can corn


2 packs of taco seasoning


2 cans of kindney beans (I will only use one can next time, 2 cans were just too much for me)


The finished product in a throw away bowl (for dh because of his radiation), it is much better than it looks! The recipe calls for pouring the food over the fritos and cheddar cheese, see the subforum above for the recipe!


Here is a tator tot casserole I made from a recipe posted in the archives. I think Jen, Clara's mom posted it. It was really good, although next time I will get the more expensive evaporated milk becuase I used the cheapest and it had an after taste.

2 lb bag of tator tots
can of evap. milk
one pound burger cooked
one can cream of mushroom
one can cream of chicken

SO EASY, finished product: Logan LOVED this one too!


Last, I tried the swiss chicken recipe, it had the intention of being very good but I ruined it! I over cooked it and the chicken was like beef jerky

The stuffing, soup and the swiss cheese were so yummy together, so I ate ton of that since I ruined the chicken. I will be making it again and won't cook it so long. I would love someone else to try it and tell me how it was for them.

Okay this is a little late, but last week ended up going by without trying the recipes! Even though I bought the ingredients. I made the Swiss Chicken tonight and let me just say it smelled so yummy cooking. DH hates trying new things and of course picked it apart, but in the end he ate it and said it was a "make again recipe!" I liked it too, but I think I did the same thing as Brandy and overcooked it because it seemed a little chewy. I loved the flavors though and have enough left to take some leftovers for lunch tomorrow...and probably the next day.

Here's my picture. DH thought I was nuts taking pictures of the food!
