Lianne's Turkey and Rice

1 tray of ground turkey (20 oz)
16 oz salsa (I like using the fresh salsa from the deli counter but jarred salsa works too)
1 cup of cooked rice (white or brown)
1 small can of corn

Cook the rice first. When rice is almost done, start browning the turkey until fully cooked in a large skillet. When turkey is done drain all the excess fat. In the same skillet, add the salsa, cooked rice, and corn and mix with the turkey until done.

This recipe is really quick and easy and is pretty healthy too.

Debi's Chicken Enchilada

4 chicken breasts
1 bag Fritos
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
8 oz shredded cheddar cheese

Boil chicken and shred. Take 3/4 cup cheese, both soups, 1/2 cup of crushed Fritos, and shredded chicken and mix together. Spread crunched up Fritos on bottom of a greased glass casserole dish. Spoon chicken mixture on top and spread evenly. Place in pre-heated oven at 350 degrees F until mixture browns (approx 35-40 mins). Spread 1/4 cup cheese on top and let melt on hot casserole. Optional toppings are lettuce, tomato, onions, salsa, and olives. Low fat or fat-free cheese and soups can be substituted, as well as fat-free tortilla chips.

I asked Debi to clarify how to boil the chicken because I have no clue how to do it This is the info she gave me:

Ok, for boiling the chicken, in a large boiling pot just fill it about 3/4 way up, enough water to cover all the chicken up. I've never really timed it, but the chicken turns white when done. Maybe 20-25 mins total, including time for water to boil and all. I usually get out a breast and slice a tad to check. If there is pink (like before you started cooking it) then it needs to boil a few mins longer. I usually larger breasts, or if they look small I throw another piece in there. Good thing about it being shredded up is that an extra piece doesn't mess it up.

Tonight I made your Enchilada Casserole! It was really yummy!! My only thing is that I once again, over cooked the chicken. I should have boiled it a shorter amount of time but I went for 25 minutes because they were huge and they got dry.

I also think next time I will add taco seasoning to the chicken somehow, not sure how but I think it needs more seasoning...any thoughts on this?

We added sour cream, salsa, lettuce, tomato and black olives to it!! Dave loved it and so did I, Teagen wouldn't eat hers on her own but I fed her mine and she liked it.

I know, it's awesome! So glad you liked it! It's hard to explain to people, cause the name makes it sound like enchiladas but it's more like a casserole. My mom used to make it and every friend that ever spent the night with me as a kid would usually get that recipe for thier moms at some point. LOL.

I am going to try Lianne's recipe tonight but since I can't eat ground turkey I am using ground beef instead. I hope it comes out as good. wish me luck lol!

I made Debi's Chicken Enchilada...can I say YUM? I topped mine with lettuce and salsa, but DH left his just the way it was. He liked it and I was worried that he might not. I was thinking maybe next time adding a can of green chilies to add a little flavor in the casserole itself, but it's great the way it is and hubby says to leave it alone! It was so easy I cooked the chicken and mixed everything except the fritos last night and came home tonight added the chips and threw it in the oven. Ava liked it as well, but not as much as just eating the lettuce...crazy girl!

I just chopped it all up. I guess I didn't really shred it just kind of pulled it apart with a knife and fork. Just so it wasn't in chunks.

i made debi's casserole on thanksgiving night [we did thanksgiving earlier in the week] and it was AMAZING! Johnny ate 3/4 of the pan! My mom tried some the next day and asked for the recipe [:

I am currently making Debi's Chicken Enchilada but I made a few changes based on suggestions..

I am using the chili flavored fritos instead of the regular corn chips. And also I added a few table spoons of chopped mild green chili's!

I've never been this adventurous before! LOL

I'll post pictures when it's done. And.. if anyone asks why I am cooking dinner at 10:51am it's because some days I like to relax in the evenings and not have to cook. So I cook in the mornings and throw it in Tupperware for later!
