1lb ground beef browned and drained

1pkg. taco seasoning

1- 8oz pkg shredded cheddar or the mexican mix (kraft) cheese.

1 (regular size) bottle of 1,000 island dressing

1 pkg crushed taco chips (any yummy Dorito flavor works, except the Ranch)

1 can (8-12oz.) chopped black olives, drained.

1 can red kidney beans - drained and rinsed (these are optional, I sometimes sub pinto beans or no beans)

Chop:

1 head of lettuce

Dice:

1 small onion

2 tomatoes

Brown your ground beef, drain. in large mixing bowl combine beef, taco seasoning, cheese, and black olives. Mix well. Add your chopped lettuce, onion, tomato and beans. Toss together. Chill until ready to serve. About 1/2 hour before serving add the bottle of 1,000 salad dressing and toss. Top with chips. Doing these two steps last helps keep the lettuce and chips from getting too "wilty".

That sounds good! My aunt makes a similar salad with Italian dressing! Yum Yum!
