I seriously feel like lunch is the hardest meal of the day to get through because I only have a few things that are healthy that I like to eat! Salad, light sandwiches, soup...blahblahblah.

Does anyone have any favorites??

This is one of my favourites:

Brown some cut up chicken (or use leftover cooked chicken; even easier!), then add veggies (I use broccoli florets and sliced carrots). Then add 2 cups of chicken broth, 1-1 1/2 cups of instant rice, a splash of soya sauce (I also add some oyster sauce) and a sprinkle of garlic powder. Bring to a boil and simmer until the rice is cooked and the liquid is absorbed.

I do a lot of leftovers for lunch... I'll make a bit extra at dinner so that I can pull it out of the fridge a day or two later. Being at work for lunch so often, though, I fall back onto a lot of Lean Cuisine and Healthy Choice meals.

Lately we've been doing a lot of lettuace wraps. Might sound gross but I love it. We use shaved deli turkey, pile it in a green leaf of lettuace (or 2 or 3)... I add some hummus just bc I eat it on everything, LOL, and roll it up!! I'm cutting out bread so it's a good alternative

OOh I could totally do a healthy version of Cheesecake factory lettuce wraps! Grilled Chicken, lettuce, bean sprouts, carrots, cukes, and maybe a low-fat asian vinaigrette! Awesome.
