I think I'll have another salad tonight. Last night I made a delicious salad with Trader Joe's Herb mix salad, tomato slices, avocado, sea salt, pepper, cayenne pepper, pomegranate infused vinegar and orange infused olive oil. Perfection! I think I'll make it again today. London won't eat that though so I'll probably make her a small side salad with just the lettuce and something easy for a main dish. Not sure what yet...
Ok, my actual dinner wasn't quite as healthy as the original plan. I saw a box of stove top stuffing and it suddenly sounded delicious so I made that up. I served it with steamed broccoli rabe and cherry tomatoes. For London, I omitted the cherry tomatoes but added string cheese.
We had pork chops, cheese potatoes and peas/corn for veg. Aidan actually ate a good amount of his pork chop, which he never does. Proof that with large quantities of plum sauce, the kid will eat anything.
Tonight is swimming, so we'll be grabbing fast food of Aidan's choice. Most likely DQ.
