I *try* to work them into the next day or two, but the thing is, at my house there are usually only enough leftovers for one person or two, and I have six to feed. So sometimes I let them pile up for a few days and then have a leftover smorgasbord. Or I make some leftovers and something else easy, like pizza buns. Sometimes it's hard to make it all work out just right but I try hard not to throw things out unless they really are inedible.
I don't intentionally make dinners to have leftovers, but if there happen to be leftovers, someone usually eat them the next day. It depends on the food... I don't like reheated mashed potatoes or second day pasta... but most everything else is okay. Sometimes DH takes it to work, sometimes one of the girls will eat it, sometimes I will.. depends on the day.
With 7 of us in the house there are not much leftovers, the kids usually like seconds if there's spare. unless we have a chicken roast there is almost always spare chicken so the kids have chicken sandwiches for supper.
We kind of do what Erin does. If there is anything, it's only enough for the girls or dh. Then we will make something else as well.
I really try to make only enough each night. That way I don't have to deal with leftovers or have to worry about over eating.
