Hey ladies! I know it is a little early, but I was wondering if anyone wants to share some meal recipes that you can make ahead and freeze so they will be easy for you or DH if your lucky to pull out and heat up after the baby is born.

My MIL will be "around" and my mom is coming about two weeks after baby gets here so it would be nice for me to have some food stashed in the freezer that are easy for DH to make (since i won't be doing any cooking after a c-section).

Anyway, if anyone has any great recipes, please share! I am trying to get a huge list made up and then I am having a friend come over in Sept and we are gonna cook and freeze all day!

I would love to share!! But alas, I have none. I only know how to freeze chili. lol I'll be watching this thread though! I plan on getting at least 2 weeks worth frozen...

This is a great idea! I didn't do that last time, but with having the two kids, it's going be necessary. My mom came out to AZ for a week last time, and cooked and cleaned and stayed up with the baby while we adjusted, but I think she'll have her hands full with Cohen so I'll want to have something food prepared ahead of time.

I'll have to get the recipe of some chicken, broccoli and cheese stuffed shells that you can freeze.

OK. Here are two of mine-sorry one is just lasagna, which I am sure that everyone has their own recipe to, but it is really good, freezes well and requires no thawing-you simply pull it out of the freezer and stick it in the oven!

Lasagna

1/2 pound Jimmy Dean's reg sausage
1/2 pound hamburger
1/8 tsp garlic 1 T basil
1 1/2 tsp salt 1 28 oz can tomato sauce
10 oz lasagna noodles (about 6-8)
1 pound mozzarella cheese
3 C cottage cheese 1/2 C. Parmesan cheese
2 t. parsley flakes 2 eggs, beaten
1 tsp salt 1/2 tsp pepper

Brown meat together and drain fat. Add garlic, basil, salt (1 1/2 tsp) and tomato sauce. Simmer uncovered 20 minutes. Cook noodles in water till done and drain. Combine cottage cheese, parmesan, parsley, salt (1 tsp), pepper, and eggs.
Preheat oven to 375 degrees.
Place half of noodles in 9x13 pan. Spread with half of cottage cheese mixture. Add half of mozzarella cheese over all. Then half of meat mixture. Repeat layers.
Bake 30 mins. Let stand 10 mins before serving.
If you freeze it- bake 1 hour!

(Just a note-I usually make a double batch and have one lasagna for dinner and freeze one, that is so much easier!).


CREAM CHEESE CHICKEN

1 .7 oz envelope italian dressing mix
1/2 C butter
2 pounds boneless, skinless, chicken breasts
1 can cream of chicken soup
1 8 oz pkg cream cheese

Turn slow cooker on high. Place butter in bottom of slow cooker. When butter has melted, add envelope of italian dressing mix. Stir into butter until well mixed. Cut chicken breasts into 1 inch strips. Put in slow cooker and stir to coat. Cover and cook on high 2 hrs. Remove chicken to plate to cool. Add cream of chicken soup and cream cheese. Stir to melt and mix well until smooth and creamy. Remove sauce from slow cooker and allow to cool. Place chicken and sauce in gallon resealable freezer bag. Label and freeze.
To serve: Thaw. Heat until piping hot and bubbly. Serve over mashed potatoes, rice, or hot, buttered noodles.
