I have PCOS w/ Insulin Resistance so I need to cut out the carbs (which sucks, I love carbs! )

Anyway, is anyone in here used to cooking an insulin resistant diet (or a diabetic diet, I believe they're the same thing?)

any meal recommendations or cookbooks? I have to satisfy my meat and potato man too

My sister has Type 1 Diabetes, and she cooks for a meat and potatos man that is not diabetic. I gave her these and she says she likes them. Her bf thanked me

I don't have diabetes, but I have this one:
Amazon.com: 1,001 Delicious Recipes for People with Diabetes (9781572840416): Sue Spitler, R.D. Linda R. Yoakam, C.D.E. Linda Eugene R.D., M.D. Louis H. Philipson, R.D., Linda Eugene: Books

I've done a handful of the recipes from it and they've all been good. Some of the dishes are kind of labor intensive, so if you like simple to prepare meals, it might not be a good bet.
