What do you do with all your leftover ham? lol We still have a bunch and have eaten it since Sunday! I made a casserole with some, it's really good but what else do I do with it?

Ham and Pea soup!! I LOVE this!! It's a Canadian favorite and now that it's in my head...I think I'll take a container out of the freezer for supper!

Dh suggested ham and eggs but we're out of eggs, from coloring them all. lol
How do I make ham and pea soup? I've never made it. lol

Lol well we had a fire in the yard got tired went to sleep.. completely forgot about the ham still being in the cooker!.. so trash... :/

I usually freeze some for ham steaks. Then when I want them I just defrost and cook them in the frying pan.

I also chop some and put it on salad or I make potato soup and chop up some ham to put in! I know you love potatoes!

here is a recipe my friend gave me
Potatoes O'Brian on the bottom
cover w/diced ham
scrambled eggs w/cheese
8 eggs, 1 cup milk, 1/2 tsp salt, pepper to taste
layer everything cover & bake @ 350 for a hour and then uncover & bake 15 mi. to brown it

I made ham and cheese omelets.

I also like to make Ham and Peanut Stirfry, it's really not an exact recipe, just something my sister used to make and my family really likes it.

(I just copied this recipe from the recipe exchange we had in my playroom a while ago)


3 cups cooked rice (I use jasmine rice because it smells and tastes really yummy, but you can use anything, I've even used minute rice, just cook it ahead of time)

3-4 slices ham cut into pieces

onion if you like it

1 shredded carrot if you like it

1 pkg frozen brocolli - cooked - I just put mine in the microwave for a while (guess you could use fresh if you wanted, I cut it up into pretty small pieces because my Dh doesn't really like it very well but eats it small)

dry roasted peanuts (I'm guessing about a 1/2 cup but I don't measure mine)

soy sauce to taste

In a large skillet saute onion and carrots in a small amount of oil. Add ham and peanuts and stir until hot. Add cooked rice and brocolli and stir to mix and heat through. Add soy sauce to taste, but I usually just put in on the table as everyone likes a different amount. (I've also added mushrooms to this recipe and it's good too)
