I made my first batch of sweet potatoes, but once they were frozed they turned green. Is this safe? Is it just oxidization? Did anyone else have this happen to them?

I made sweet potatoes and they didn't turn green in the freezer - they've been in there over 2 months now and are still perfect. Did you mix something with them? I just puree my veggies and freeze them that way, I don't thin them with breast milk til after I thaw them.

I have no idea if they're safe or not. Honestly, if it were me I'd toss them. Better safe than sorry!

I agree. I've never had that happen. I'd toss them and start over.

Never happened here. I would toss them. Nothing I have made has changed color in any way

I had sweet potatoes that were kinda yellowy-green to begin with and they are fine but they didnt change color after freezing. They were that color to begin with.

i have never heard of that happening before. my sweet potatoes stayed the orangish/brown color. I'd play it safe and make up a new batch

That's a bummer. I just boiled them and took a bowl for Ez to eat that night, then made the cubes. I'll try it again and this time I will roast them first instead of boil. But the plate that we ate that night (not frozen) was fine and beige. So weird.
