I made sweet potatoes and they didn't turn green in the freezer - they've been in there over 2 months now and are still perfect. Did you mix something with them? I just puree my veggies and freeze them that way, I don't thin them with breast milk til after I thaw them.
I have no idea if they're safe or not. Honestly, if it were me I'd toss them. Better safe than sorry!
That's a bummer. I just boiled them and took a bowl for Ez to eat that night, then made the cubes. I'll try it again and this time I will roast them first instead of boil. But the plate that we ate that night (not frozen) was fine and beige. So weird.
