What's your meal of choice when you are short on time and have a hungry toddler/monster gnawing at your ankles?

Times like that I do a finger food lunch

cheese cubes, fruit slices/chunks, veggies and dip

Sometimes I'll add crackers or pretzels.

Sandwiches are always easy. I also like to do pizzas. I'll either use whole wheat bagels or english muffins. I just add tomato sauce, tiny chopped veggies, & shredded cheese. Sometimes I add pepperoni or ham. The kids love them.

either a sandwich (pb&j/honey, or turkey and cheese), or finger foods (cheese, fruits, veggies and hummus with or without crackers). Or we warm up left overs, that's always fast too!

Val, I need to start keeping stuff for the mini pizzas. My kids would LOVE them!

I keep the cheese and bagels/english muffins in the freezer so they don't get bad if I don't use them fast enough. I make them as I need them and then pop then into my toaster oven. You can make a bunch ahead of time though, par bake them, freeze them, thaw them and then finish baking.

Boden loves peanut butter and banana sandwiches!!!

Another idea: scrambled eggs with cheese and toss in some leftover veggies and/or meat -- whatever you have to use up from last nights meal!
