Tacos! I usually make mine a taco salad but Ryan forgot the lettuce when he went to the grocery store. I am hoping someone can get there for me!

Pasta with meat sauce (aka jarred sauce with some cooked up hamburger in it) - Nothing too inspiring there.

Last night was dry herb rubbed roasted chicken breasts with homemade applesauce and spinach. Tomorrow night is a greek-inspired shrimp dish from America's Test Kitchen that has feta and is cooked in a tomato-based sauce.

Pasta and meat sauce (pasta from a jar with hamburger meat) The kids love it...I will make some garlic bread...that is my favorite part!

I feel your pain....I HATED having gestational diabetes...It was a sucky 2 months...10 minutes after the boys were born I had a dr pepper in my hand and had put in my order for a pizza!!

Tricia....I use russet potatoes. After I peel them, I nuke them whole, for just a minute or two, let cool, then slice in strips...put in a large bowl and drizzle a bit of canola oil on them, salt and pepper, then toss to coat...put them on a cookie sheet in an even layer, then bake at 425 until golden brown and crispy...I usually turn them a time or two during the process.
