2 (18oz) bottles of barbecue sauce
1 (15oz) can of pineapple chunks- do not drain!
1 green bell pepper, chopped
1 onion, chopped
2 garlic cloves, minced
8 boneless skinless chicken breast halves
In a large bowl, mix together bbq sauce, pineapple with juice, green bell pepper, onion, & garlic
Arrange 4 of the chicken breasts in the bottom of the crock pot
Pour half of the sauce mixture over the chicken
Place remaining chicken in & pour remaining sauce over the top
Cover & cook on low 8-9 hours
** I don't know where whoever invented this recipe came up with 8-9 hours but I cooked it for 5 & it was falling apart. If I'd left it for another 3+ hours, it would've been dehydrated chicken. Yuck. I think the only way it would take this long is if you put it in frozen.
I served over brown right & steamed cauliflower & broccoli & then was a ton of sauce leftover.

Melissa--what kind of BBQ sauce do you use? Something sweet like Honey BBQ or something with a little more spice? I'm going to try this on Friday and with John, dinner recipes usually only get one shot!

I think I used either brown sugar & honey or the original...I'm sorry, but I honestly don't remember  I know I used Jack Daniels because it was on sale & I had coupons. I'd say it's really up to your own personal preference. Maybe since you have some sweetness with the pineapple, you wouldn't need more with the bbq sauce, but that'd be up to you. Good luck with it & I hope it turns out well!

Finally made this last night and my gosh it was good. I haven't really found to many crockpot recipes that I would make twice but this one is definitely going to be made again  I agree though I can not imagine cooking it for 8-9 hours like you I cooked it for 5 1/2 and I think the chicken was a little overcooked so I can't imagine 8-9 hours. Thanks for sharing this recipe

So glad you liked it Joanne! I love those easy peasy recipes that you can just throw in & leave it alone for a few hours. And the good smelling house is always a bonus too
