Hi, Ladies. Since September of last year, I have really been trying to eat healthfully. When I got my BFP, I kinda fell off the band wagon for a week. I can easily see how people fall into the "I'm eating for two" category (even though I know I'm really not eating for 2 grownups...). Here's my question: What is your favorite healthy meal to cook?

Right now, I have some veggies roasting in the oven... it's a mixture of red bell peppers, zucchini, sweet potatoes, red potatoes, broccoli, and red onions. I toss the veggies with a little bit of olive oil, throw in some thyme, rosemary, salt, and pepper, and pop them in the oven in a shallow baking pan for about 30 minutes. The smell is amazing, not to mention the taste!

Usually I would serve this with grilled chicken and couscous or brown rice.

This isn't necessarily my favorite, just something healthy for tonight.

Also, do you have any favorite recipe websites? allrecipes.com is my absolute favorite!!

I am so glad you posted this!! I was eating clean before I started trying and now I have feel off the wagon. I can't gain the wait that I gained w/last pregnancy. Let me think about stuff that I like is clean and I will get back.

Great thread! I will have to look at see what I have in my recipe box. I seriously hate making dinner. I would so much rather have a bowl of cereal! DH doesn't really care either, he's perfectly happy eating a salad for dinner. I need to get better about making regular dinners though! Someone motivate me!!!!

Here is something that I like for breakfast.

Mixed Berry SMoothie~~
1 cup of frozen mixed berries
1 scoop of whey vanilla protein powder (I am wondering if this is ok while pregnant)
10 oz of vanilla soy milk-light
1 tbsp of mother's nature wheat germ(optional)

Put all this in blender and their you go! I also sometimes add 1/2 cup of oatmeal to the mix.

I'm with you Carrie - I hate making dinner, especially when I'm tired and don't care what I eat. DH doesn't think it's a meal if it doesn't have a meat, a starch, a veggie, and a bread!

I'll search my recipes too!

I LOVE cooking dinner! It definitely started when I found healthy, delicious recipes! I wasn't motivated to cook before that. My favorite thing is finding a recipe and trying to "skinny it up" and keep it good! Using lowfat yogurt rather than oil in baking is one of my favorite ways!

Applesauce is a great substitue for oil when baking.

This is for the ones that don't like to cook.
Smoky Joe's Slow-Cooker Beef Stew
4.5 Points Per Serving

1 pound well-trimmed beef cubes
3/4 cup each salsa and barbecue sauce
1 (1.25-ounce) packet reduced-sodium taco seasoning mix
2 cups frozen corn
2 (15-ounce) cans rinsed and drained black beans
1 (19-ounce) can rinsed and drained chickpeas or garbanzo beans
1/2 cup fresh cilantro
In a 3- or 4-quart slow cooker, combine beef, salsa, barbecue sauce,
taco mix and corn; mix well. Cover and cook on high 3 to 4 hrs or low 6
to 8 hrs, or until meat is tender. Add beans and cilantro; mix well.
Cover and let stand 5 mins for beans to heat through.
Serves 8
Nutrition info per serving: 301 cals; 23g protein; 5g fat (15% of cals; 0.8g sat);
40g carb; 35mg chol; 1,002mg sod; 11g fiber.

Well this idea is more for getting kids to eat veggies, but I really like the cookbook "Deceptively Delicious" by Jessica Seinfeld!! I think because she adds the veggie purees it makes the meals a lot healthier!! Maybe not what you were looking for, but it's all I've got right now. Niko is very picky and I have had to do a lot of cooking around him. So, I'm looking forward to your ideas ladies!!

Oooooo!!! now I want salmon!! lol! I've never made it myself though. I'll have to get some cedar planks, and salmon, and try it! Yum!! I think I'll make some steamed veggies, wild rice, and a Greek salad too!
