Is he willing to try tofu? I went to a cooking class when I was pregnant and they made this and I really liked it! I'll share with anyone who wants to try it.
Grilled Tofu and Vegetable Sandwich
1/2 pound firm tofu thinly sliced
1/2 cup soya sauce or tamari sauce
1tsp grated ginger
In a bowl mix all the ingredients and cover and let sit in the fridge for at least 30 minutes,but you can leave overnight if you wish. Turn the tofu pieces a a few times.
The Sandwich part:
1 large zucchini and onion sliced
a hand full of mushrooms,sliced
1 tbs olive oil
mayo or mustard or both
salt and pepper to taste (you may want to go easy on the salt since the soya is salty)
bread (I like the thick homemade CIABATTA style)
In one pan stir fry the veggies in the oil and in another pan fry the tofu slices. You can toast the bread if you want and add whatever topping like mustard,mayo,salt and pepper,even tomato.... then add the tofu and veggies.
He doesn't like tofu and I tried seitan last night and he didn't care for it. He's not a very picky person, either. Last night I made vegan mushroom stroganoff for him. Other than the seitan, he liked it. Next thing I am going to try is tempeh fajitas. Vegetarian chili has been a big hit too.
I find that the "veggie crumbles" style stuff are tasty and super easy to add to anything that you'd normally have meat in. Morning Star Farms makes a good one,I wish we had it in Canada. I think you can find it in the freezer section.
