This recipe was shared by Karen!

Parmesan chicken tenders

cooking spray
1/2 cup Italian bread crumbs
1/4 cup parmesan cheese (fresh finely grated or kraft)
1 tsp garlic powder
3 large egg whites
1 pound of boneless skinless chicken breast cut into 24 strips

Preheat oven to 400 degrees. Spray 9x13 pan (I used pyrex) with cooking spray.

Combine garlic, cheese, and bread crumbs in shallow bowl

Whip egg whites in separate shallow bowl

Dip chicken into egg white and then coat with bread crumb mixture

Place chicken onto prepared 9x13 baking dish

Bake until chicken is crispy on outside about 25-30 minutes.

Serve with dipping sauce (marinara, BBQ sauce, ranch etc)

WW 6 points (plus the dipping sauce). Makes 4 WW servings (or 2.5 servings in my house! 1 WW serving for me, a small serving for Connor, and the rest for DH!). 6 chicken tenders per serving.

Karen sent me this recipe last week and I've already made them twice since then! haha. I'm not doing WW, I'm doing the 17 day diet but we can have unlimited eggs and chicken and FF cheese is okay... so I just try to limit the bread crumbs. fat free condiments are okay in moderation... so this makes me feel like I'm eating something deliciously bad without being bad. It also is nice to have a new way to cook the same boring old chicken I've been eating lately and its so easy! Thanks for sharing Karen!



the bottoms looked a lot crispier b/c of the coloring but they were the same texture as the top:

I make the same chicken fingers but use Bisquick instead of bread crumbs (the recipe is on the Bisquick box). Oh, and they suggest melted butter in lieu of cooking spray... ... but I use cooking spray anyway. This is chicken Major will actually eat!

Tried them last night. I added more cheese to the top and dipped them in bbq sauce. Overall, I think they needed more seasoning than just the garlic powder. I added pepper too but it seems like it was missing something. But they were pretty good.

I'm making them now!! I can't wait to eat em! Yummy, I'm using precut chicken strips from the store so it might be a little different on the cooking time. And I'm gonna use panko bread crums instead.

Lindsay I use the chicken tenderloins, which are just precut chicken breasts and the cooking time was fine for me

It was SO was delicious.

Other than the panco I used just one whole egg and I cooked them on a backing sheet that was covered with parchement paper so I didn't need to use any butter or cooking spary.
