Okay I know a lot of you bought a box of bisquick a couple of weeks ago for the cheeseburger pie, so I wanted to post another recipe using bisquick so you could get some more use out of it! I love this recipe b/c its SO easy and I usually have all of the ingredients on hand. I just keep a bag of frozen diced onions and a bag of frozen peppers in the freezer and then this is SO simple and I always have the stuff on hand for it.
1 cup chopped broccoli
½ cup chopped onion
½ cup chopped green pepper
1 cup shredded cheese
-Boil broccoli in water for 5 minutes; drain.
-mix above ingredients and put in greased 10” pie pan
Mix the following & blend well:
1 ½ cup milk
¾ cup Bisquick
1 tsp. salt
1 tsp. pepper
if you look in the back of the book there is a recipe for spinach quiches in cupcake liners... I haven't made them or looked at the recipe but my SIL made them and said they were delicious, so you could see that for substitutes since it would be the same consistency. everything in this recipe is okay except the bisquick and milk. the cheese you'd just have to do fat free. (it says FF cheese in moderation is ok, I don't know that this is necessarily moderation, but, you know what I mean, lol)
